綠豆含有醣類、蛋白質、脂肪、維他命A、B1、B2、和磷、鈣、鐵等微量元素。
綠豆發芽後，維他命C的含量會大幅的增加，因此綠豆和綠豆芽是一種藥用價值和食用價值很高的蔬菜。
綠豆的性味甘涼，可治療：
1、常喝綠豆湯能使小便通暢、消暑解渴，減少因氣候所致的頭昏腦脹、 疲倦無力、身體發熱、咽喉疼痛等。
2、綠豆是中藥重要的解毒劑之一，舉凡食物中毒（如誤食毒菇、吃了腐敗的食物、或誤食病死的牲畜等）、藥物中毒（如砒霜、慢性鉛中毒等）！
3、在呼吸道傳染病的流行期間，不妨多煮食綠豆湯，尤其現在腸病毒正蠢蠢欲動，多喝些綠豆湯將有助於預防流行性感冒、腸病毒感染、腦膜炎、腮腺炎等。
4、在炎熱又潮溼的夏季，兒童很容易滋生皮膚病，如果經常給孩子喝一點綠豆湯，將有助於控制病情，此外將綠豆粉磨細，並配合其他中藥敷在患處，可以改善局部皮膚的發炎和過敏等現象。
5、容易患膀胱發炎的患者，在小便變得頻繁、疼痛、急迫時，不妨喝下大量的綠豆湯，也將對病情有所幫助。
綠豆的用量與體重的多寡，疾病的嚴重性以及火氣大小的程度有關，但一般說來服用綠豆也有一些注意事項，例如：
1、患有痛風的病人，不宜食用太多的綠豆，以免尿酸增加。
2、綠豆皮的清熱解毒效果最強，因此食用時最好連綠豆皮一起吃下。
3、如果想要加強綠豆湯的退火效果，不妨加入適量的仙草凍，作法為將仙草凍切成小方塊，放進已煮好的綠豆湯內，馬上就變成一碗清涼可口的綠豆仙草冰喔！
