熱狗、香腸的解毒青菜

許多兒童特別愛吃熱狗、香腸，但此類食物含有多種添加物，對健康不好，該怎麼辦呢？
一般在製作火腿、熱狗及香腸時會加入亞硝酸鹽，具有「固色」作用，並能抑制肉毒桿菌孳生，是製作這類食品的「必要之惡」。業者也會添加合成食用色素，讓產品的賣相更好，並以適量的防腐劑來維持肉品鮮度。
吃進這麼多食品添加物已經不妥，過量食用的話更有致病危機。除了盡量選擇較少添加物或有食品安全標章的商品外，汆燙後再吃，也是簡單又有效的辦法。
日本食品問題研究專家增尾清建議，烹煮前先在熱狗劃上3刀左右，再汆燙1分鐘，讓添加物溶解出去，便能大幅減少吃入的添加物量。至於切片的火腿與培根，由於表面積比較寬廣，只要短短燙個10秒左右，便能充分將添加物溶解在熱水中，而不會影響味道及外觀。
如果還是不放心，可選擇高麗菜搭配火腿、培根或熱狗腸一起食用，便能發揮一定的解毒作用。高麗菜富含β胡蘿蔔素、維生素C和E、鈣、食物纖維，植物素之一的異硫氰酸鹽更能有效抗癌，這些營養素都能預防添加物帶來的傷害。
另外，不要以優酪乳及活菌發酵乳搭配熱狗食用。這些飲料的活菌會將熱狗中的硝酸鹽轉化為亞硝酸鹽，再和蛋白質結合成致癌的亞硝酸胺。兒童代謝能力較弱，長期食用恐有致癌危機。
