涼拌菜秘訣

以下為你提供6道涼拌小菜做法:
一、皮蛋拌黃瓜
（一）用料：
黃瓜1根，松花蛋3個，蒜5瓣，生抽1/2湯匙，食鹽1茶匙，陳醋1湯匙，白糖1/2茶匙，芝麻油1茶匙，雞粉1/2茶匙，辣椒油1湯匙
（二）製做方法：
1、黃瓜洗淨用鹽水浸泡15分鐘，黃瓜用刀背拍碎塊，皮蛋切瓣，蒜頭剁碎末
2、各種調味料(生抽、鹽、陳醋、白糖、麻油、雞粉和辣椒油)混合，皮蛋和拍黃瓜擺盤，撒上蒜末
3、淋上調味料即可上桌享用
二、香椿拌豆腐
（一）用料：
香椿1小把，豆腐1塊，食鹽1茶匙，香油1/2湯匙
（二）製做方法：
1、香椿洗淨用開水燙一下，變綠後瀝乾水
2、切成香椿碎，豆腐切成小丁後，放入開水鍋中焯一下，撈出瀝乾水(焯的時候加適量鹽)
3、豆腐丁和香椿碎都放入大碗中，加少許鹽和適量香油，拌勻即可
三、涼拌海帶絲
（一）用料：
海帶絲50克，胡蘿蔔50克，香菜1棵，蒜5克，香醋1/2湯匙，生抽1/2湯匙，白糖1/2茶匙，食鹽1茶匙，植物油1.5湯匙，乾辣椒3個
（二）製做方法：
1、海帶絲提前用清水泡至1小時，胡蘿蔔洗淨切成絲，香菜洗淨切成寸斷大蒜去皮，剁成碎放入小碗中，加入生抽、香醋、白糖和鹽
2、鍋中注水，燒開下入海帶絲和胡蘿蔔絲焯水，撈出放入冷水中沖涼，再撈出瀝乾水分
3、另起鍋注入油燒熱爆香辣椒，趁熱將辣椒油熗入蒜料中，將調料倒入海帶絲和胡蘿蔔絲中，加入香菜拌勻即可
四、洋蔥拌木耳
（一）用料：
黑木耳150克，洋蔥半個，柿子椒半個，紅椒半個，花椒1小勺，乾辣椒2個，食鹽1克，生抽1小勺，醋1小勺，植物油1大勺
（二）製做方法：
1、洋蔥，青紅椒洗淨切絲;木耳過滾水焯一下
2、把乾辣椒剪碎，和花椒一同放入勺子，加入油，放火上至飄出椒香味
3、把木耳，洋蔥，青紅椒和料汁(鹽，生抽，醋)攪勻，倒入煸香的油，翻均勻即可
五、粉絲拌菠菜
（一）用料：
菠菜900克，粉絲1小把，紅尖椒半個，杏仁12個，蠔油少許，芝麻油少許，沙拉油適量，食鹽4克
（二）製做方法：
1、菠菜切去根部，清洗乾淨，切段;粉絲用涼水泡軟;燒一大鍋水，水開後放進菠菜，加入油、鹽，水再次煮開即可撈起放進準備好的涼開水裡
2、燙過菠菜的水繼續用來燙粉絲
3、把燙熟的粉絲和菠菜撈起，瀝乾水分，裝進大碗裡，淋入麻油、加入蠔油，用筷子拌勻，撒上紅椒粒和杏仁碎裝飾即可
六、涼拌金針菇
（一）用料：
金針菇適量,柿子椒適量,紅椒適量,蔥少許,蒜適量,生抽少許,醋適量,香油適量,白砂糖少許
（二）製做方法：
1、水燒開，先放入金針菇、青椒紅椒絲燙30秒，撈出
2、將撈出的1料放入冰水裡浸泡半分鐘
3、1.5勺生抽、1勺醋、小半勺糖和蒜蓉充分拌勻成濕料，將2料撈出，輕輕擠乾水分放入拌勻，上桌前滴幾滴麻油即可。
