紅燒菜秘訣

以下為你提供14道紅燒菜的製作方法:
一、紅燒肉
（一）原料：
帶皮五花肉500g，蔥、薑一塊，八角，桂皮，香葉，冰糖，老抽10ml，生抽40ml。
（二）做法：
1、五花肉洗淨，切成2cm見方的塊，放入清水中，加入10ml料酒浸泡10分鐘。
2、將五花肉連水一起倒入鍋中，燒開後焯2分鐘，撈出。
3、鍋不放油，放入五花肉，小火煎至發黃，至出油，把肉撥至一邊，放入蔥薑熗鍋。
4、加生抽、老抽，翻炒均勻，加入開水，沒過肉，加入八角、桂皮、香葉，大火燒5分鐘，轉小火慢燉1小時，大火收汁即可。
二、紅燒排骨
（一）原料：
排骨500克，蔥白1根，薑2片，蒜4瓣，香葉2片，桂皮1塊，大料1朵，油1勺，冰糖35克，醬油1勺，黃酒4-5勺，鹽1小勺。
（二）做法：
1、排骨涼水下鍋，不蓋鍋蓋煮開，將血沫儘量撇乾淨後，排骨撈出。
2、冰糖敲碎，鍋裡放一點油，放入冰糖，用小火炒糖色，小火慢慢熬，熬到糖的焦香散發出來，顏色也變成淺褐色，把焯過水的排骨倒入和糖一起翻炒。
3、倒入少許醬油上色，放入大料、香葉、桂皮、薑片、蔥段、拍過的蒜，倒入半碗黃酒，倒入開水沒過排骨，蓋上鍋蓋轉小火燉40分鐘，湯汁還有三分之一時調入鹽，中火收汁即可。
三、紅燒牛肉
（一）原料：
牛肉，八角，香葉，草果，桂皮，豆瓣，蔥，薑，大蒜，糖，料酒，生抽，花椒，鹽，五香粉。
（二）做法：
1、牛肉洗淨後放進沸水中，加入料酒，煮開瀝乾水份，切成小塊。
2、鍋內適量的油，燒熱後加入蔥、薑、蒜炒香，放入牛肉塊炒乾水分。
3、再放豆辨醬炒出香味，加入糖、料酒、五香粉、八角、草果、桂皮翻炒均勻，加入浸過牛肉的開水，放入高壓鍋內壓20分鐘即可。
四、紅燒牛筋
（一）原料：
牛筋500克，薑30克，紅蔥頭4粒，蕃茄辣椒醬5大匙，水2000ml，米酒1大匙，細砂糖1大匙。
（二）做法：
1、牛筋洗淨瀝乾，薑切片、紅蔥頭切未備用。
2、取一鍋放入2000ml的水煮沸。
3、將牛筋鍋中，以小火煮約2小時至軟後撈出沖冷水，再切小塊備用。
4、另起一鍋放入少許油，以小火爆香薑片及紅蔥末。
5、將蕃茄辣椒醬一起炒香後，放入牛筋及所有調味料，以小火煮至牛筋軟爛，剩少許湯汁即可。
五、紅燒豬蹄
（一）原料：
豬手2只，冰糖，油，老抽，生抽，蔥，薑，蒜，八角1個，桂皮1小塊，胡椒粉。
（二）做法：
1、豬蹄焯水後沖淨浮沫，用鑷子把殘留的豬毛清理乾淨。
2、熱鍋下油，油熱後，小火下冰糖炒出糖色，入豬蹄翻炒至上色。
3、加蔥薑、八角、桂皮、生抽、老抽炒香，加入開水，大火燒開後轉小火燉40分鐘左右，加鹽調味，繼續煮至豬蹄軟爛。
4、撒胡椒粉提味，大火收汁裝盤，放熟芝麻，蔥花裝飾即可。
六、紅燒雞翅
（一）原料：
雞翅中500g，蔥，薑，八角1個，桂皮1小塊，油2湯匙，老抽小1湯匙，生抽4湯匙，冰糖2小塊。
（二）做法：
1、雞翅洗淨過水焯幾分鐘，洗淨控乾水份。
2、鍋裡熱油，倒入雞翅迅速掂鍋翻炒均勻，煎一小會，加入蔥薑翻炒均勻，倒入老抽和生抽均勻上色。
3、倒入開水沒過雞翅，加八角、桂皮，大火燒開，轉中火至湯汁濃稠時加入冰糖，翻炒至冰糖融化，燉煮大約15-20分鐘即可。
七、紅燒肥腸
（一）原料：
豬大腸500克，蔥、薑、蒜片20克，青紅椒各半個，鹽適量，食用油600毫升，生抽2勺，老抽半勺，糖2勺、料酒2勺。
（二）做法：
1、豬大腸清洗乾淨後，鍋中放水，加入蔥薑片和料酒煮至熟爛。
2、取出肥腸，清洗乾淨後切小段，瀝幹水分。
3、鍋子放油，燒熱至6-7成油溫時，放入大腸，炸至外皮金黃，盛出。
4、鍋中加入適量的油，煸香蔥薑蒜片。
5、放入大腸，烹入料酒、生抽、老抽，加入糖，加入適量的水，將大腸煨至入味，湯汁收濃。
6、加入鹽調味。
7、放入青紅椒翻炒出香味後關火，裝盤即可。
八、紅燒魚
（一）原料：
海魚一條，五花肉50克，植物油一湯匙，鹽適量，蔥段2段，薑3片，蒜3瓣，醬油一大勺，料酒一湯匙。
（二）做法：
1、海魚刨肚去腸清洗乾淨，蔥切段，薑、蒜切片，五花肉切條。
2、炒鍋放入一湯匙植物油，放入蔥薑蒜煸出香味。
3、放入五花肉翻炒。
4、待五花肉煸至出油變成金黃色，放入一大勺醬油。
5、五花肉在醬油裡稍燉一會，燉出香味。
6、鍋中放入適量的水，水量要一次放足，放入一湯匙的料酒。
7、放入魚，大火燒開，轉中小火燉15分鐘。
8、放適量的鹽調味，大火收一下湯汁，即可起鍋。
九、紅燒帶魚
（一）原料：
帶魚500克，蔥絲，薑絲，蒜片共20克，醬油2湯匙，醋2茶匙，紹酒1茶匙，糖1茶匙，花椒油1茶匙，鮮湯適量。
（二）做法：
1、將帶魚去頭、尾、內臟，洗淨，剁成5公分左右的段，用鹽略醃。
2、鍋中多放些油燒熱，下帶魚段炸熟，兩面呈金黃色時出鍋，瀝乾油待用。
3、鍋中留底油，下蔥絲、薑絲、蒜片煸炒，放入炸好的帶魚，烹入紹酒、醋、醬油，加少許湯，放糖，入味後淋花椒油，炒勻即成。
十、紅燒龍蝦
（一）原料：
龍蝦，薑，蒜，蔥，乾紅辣椒，香葉。
（二）做法：
1、龍蝦刷乾淨腹部，去頭上的須，去前小爪，把頭部兩側的殼剪開去除蝦的鰓。
2、鍋內底油燒熱後下大蒜粒、薑片，花椒，小茴香，大蔥白爆香一下，接著加入乾辣椒和香葉（目的是幹辣椒不會焦掉），然後馬上就往裡倒沖洗好的龍蝦。
3、翻炒幾下龍蝦馬上就會變紅， 加入料酒、醬油並不斷翻炒。
4、倒入水開始燉煮，放些鹽和少許的糖進行提味。一直用中火慢燉，將湯汁收乾即可。
十一、紅燒獅子頭
（一）原料：
肉泥300g，淮山半根，雞蛋6個（5熟1生）。
（二）調料：
生抽1湯匙，老抽1茶匙，鹽1茶匙，蠔油1湯匙，黑胡椒粉少許，花椒油1湯匙，大蔥末，薑末，麵包糠30g。
輔料：高湯1L，生抽3湯匙，老抽1湯匙，八角1個，桂皮1塊，花椒1小撮，蔥段，薑片，冰糖2塊，水澱粉。
（三）做法：
1.山藥洗淨去皮，剁碎；5個熟雞蛋去皮；剁碎的山藥加入肉餡中，加入1個生雞蛋，還有調料中的所有拌勻，順著一個方向攪拌上勁。
2.將去皮的熟雞蛋分別包入肉餡中，做成5個大丸子。
3.鍋裡放入燒至8-9成熱，把做好的肉丸子入鍋炸至表面金黃即可撈出。
4.另起一鍋，鍋中放入大丸子，加入輔料（除去冰糖和水澱粉），煮開後改成中小火，一邊煮一邊用湯勺把汁舀起澆在丸子上，煮大約30分鐘時，加入冰糖至溶化，水澱粉勾芡收汁即可。
十二、紅燒豆腐
（一）原料：
豆腐3塊，香菇5-6朵，胡蘿蔔小半根，鮮蝦6只，蟹棒3-4個，冷凍豌豆適量，沙拉油適量，蠔油適量，生抽適量，糖少許，鹽少許，水澱粉少許。
（二）做法：
1、乾香菇用溫水泡發，泡香菇的水不要倒，留著備用。
2、胡蘿蔔洗淨切薄片，凍豌豆化凍後開水焯一下備用。
3、豆腐的包裝從中間切開，切成均等段，用玉米澱粉包裹。
4、鮮蝦洗淨去皮去腦去蝦線，然後用開水焯，變色後撈出，切段備用。也可以加一些火鍋用的蟹棒備用。
5、裹豆腐的玉米澱粉不能太少，熱鍋後倒入沙拉油，小火煎豆腐，一定要一面煎好後再翻面，炸至金黃後撈出備用。
6、用蠔油、生抽、糖、鹽，還有剛才的適量香菇水，調成一碗調料汁。熱鍋後加入少許油，放入胡蘿蔔和香菇翻炒。
7、再加入備用的鮮蝦和豌豆。這時倒入剛才炸好的豆腐，由於易碎，最好是顛勺，而不是翻炒，如果最後湯汁比較多，要放入少許水澱粉，湯汁稍微粘稠後最好。
十三、紅燒茄子
（一）原料：
紫茄子，蔥，薑，蒜，生抽1湯匙，香醋1湯匙，料酒1湯匙，鹽1茶匙，白糖1茶匙，五香粉0.5茶匙，澱粉1.5茶匙，水澱粉，高湯半碗。
（二）做法：
1、茄子切滾刀塊；蔥薑蒜切末。
2、鍋裡放油，燒熱後，茄子放進去，炸到稍微變軟，撈出，大火燒油，複炸一遍，用漏勺瀝油。
3、生抽、香醋、料酒、鹽、白糖、五香粉拌勻，調成料汁。
4、油全部倒掉，蔥薑蒜末在底油裡爆一下，兌入料汁碗中，放入高湯煮開。
5、茄子放進去再次煮開，勾芡即可。
十四、紅燒土豆
（一）原料：
土豆350克，大蒜葉2根，沙拉油40克，生抽1勺，老抽1勺，蠔油1勺，白砂糖2/3勺，清水10勺。
（二）做法：
1、備好食材，土豆削皮洗淨切滾刀塊用清水泡著避免氧化。
2、大蒜洗淨切碎，開始調醬汁，一勺生抽、一勺老抽、一勺蠔油、2/3勺白糖、10勺清水、大蒜白一起攪拌均勻。
3、鍋燒熱，加油。
4、將土豆依次排在鍋中煎，煎至兩面焦黃。
5、將調好的醬汁倒進鍋中大火燒開，轉中火燒。
6、燒至剩少量湯汁的時候將大蒜葉倒進鍋中，翻炒均勻即可。
