黑象牙咖啡

喜歡喝咖啡的人都知道價格昂貴的「麝香貓咖啡」，但是，除此之外，現在又多了另一種選擇，即來自象糞的「黑象牙咖啡(Black Ivory)」—-目前價格一杯50元美金，約台幣1500元。
一、象糞咖啡的原貌
自從泰國一家高檔連鎖酒店（安娜塔拉）推出「黑象牙咖啡」後，對喜愛品嘗特濃咖啡的人來說，「黑象牙」咖啡可說是上天恩賜。
不過，象糞咖啡所費不貲，安娜塔拉酒店(Anantara Hotels)表示，經過「天然萃取」而成的象糞咖啡豆，每公斤售價高達1,100美元，是世界最貴的咖啡之一。
「象糞咖啡」，味道帶有青草、朱古力、香料和果仁之濃烈香味，但售價可算是世界上數一數二昂貴的咖啡了，一杯售價約50美元。
在此背後，其實是由名為「黑象牙咖啡慈善組織」等單位所發起的愛心活動，他們將銷售金額的8%捐作泰國金三角的大象保育基金，照顧大象醫療，甚至改善象伕們的生活。
二、象糞咖啡的製程
泰國大象吃下咖啡豆後，經消化系統排泄出來，便成為象糞咖啡豆。大象訓練師再從象糞中收集咖啡豆，經清潔、太陽曬乾後，再經烘焙、研磨，製成「黑象牙」咖啡，味道特別香醇。
研究指出，大象在消化過程中，藉著大象體內的酶（酵素），分解咖啡豆中的蛋白質。蛋白質是咖啡味苦的主因，少量蛋白質意味著象糞咖啡幾乎沒有苦味。
